Overview: A healthy diet full of fruits, vegetables, legumes, nuts & seeds, complex carbohydrates, and some fortified foods or a multi-vitamin are all a vegan needs to satisfy their nutritional requirements. This intro class offers the basics of vegan nutrition and easy recipes for meeting your nutritional needs on a vegan diet. Conducted by an expert in vegan nutrition, Christine Collins, RN, CHWC. Class Description: Learn about the many nutritional advantages of living a vegan lifestyle including how to avoid some of the current chronic lifestyle diseases affecting our society today, as well as the wonderful health advantages of obtaining important nutrients including protein, calcium and iron from plant/based sources. Christine will prepare and demonstrate the following: First Course. Kale salad with sweet apple-cinnamon vinaigrette. Kale is an amazing super food and is nature’s best source for calcium! Second Course. Sweet potato-black bean burger. Sweet potatoes are highly nutritious, anti-inflammatory, and the even promote gut health. It’s an amazing super food! Third Course Mango Ice Cream. Mango is low in calories, packed with healthy plant compounds, contains immune-boosting nutrients and supports heart health. Is it any wonder why so many call it nature’s super hero super fruit! Guests will be able to sample the food and ask questions during the cooking demonstration/presentation. Bonus! Vegan wine (NA) sampling included. Christine Collins Bio: Christine is a Registered Nurse, Health and Wellness Coach and vegan activist. She has her Plant-based Nutrition certification from eCornell as well as a Plant-based Cooking certification from Roubxe Online Culinary School. Christine loves to spend her free time with her two best canine friends, Samantha and Osiris; engaging in animal activism; volunteering for local sanctuaries; and cooking/teaching others about the enormous benefits of plant based nutrition.
